Where's The Beef?

My best-friend had an amazing 30th birthday. It was an 80's theme party and surprisingly enough almost everyone showed up in costume.  This is a picture of us getting ready for the party. I crimped her hair and used bright colored make up. I wish I would've asked my sister how she got her hair so high in the 80's. I think I was going for a Pat Benatar look with my bangs in my eyes. My best-friend Raylene lives 600 miles away from me. So I packed up the family and drove all night so that we could be there for her celebration. Her husband called me weeks before the party and offered to fly me up there. I was supposed to be his gift to her, but because we don't see each other very often I wanted to bring the family so she can see how big my kids are getting. I had so much fun seeing her and her family, they all mean so much to me. I am so grateful I was able to celebrate her birthday with her. 
Where's the beef? There isn't any... I made pulled pork nachos.

10 hours in a crock pot and it just melts with a touch of the fork.

Nacho Cheese Sauce


  Top the nachos with onions, cilantro, tomato, jalapeno, avocado, and sour cream.

This was so yummy, I made it again tonight and had Noni (my mom) and Papa Jim (my father in law) over for dinner. It's a lot of food for just one family. Plus I have leftovers.

Fat Tuesday!

Today isn’t just any Tuesday, it’s Fat Tuesday—Mardi Gras. It’s the last no-holds-barred day for feasting and frivolity before Lent begins and—presumably—we swear off excess and austerity measures get put in place for the next 40 days.

Fat Tuesday is known by other names, as well, including Shrove Tuesday and, my personal favorite, Pancake Tuesday. Pancakes! Now we’re talking.

How the day came to be called Pancake Tuesday by millions of Christians around the world has do with the tradition of giving up yummy, fatty foods such as butter, eggs and milk during the Lenten fast. Because toss a little flour in with that naughty butter, eggs and milk, and there you have it—pancakes.

But Shrove Tuesday flapjacks aren’t just for breakfast. Traditionally, hotcakes are served for dinner as a final hurrah to fat. And breakfast for dinner is always a fun way to mix it up, no matter what day it is. So, breakfast for dinner it is.........Enjoy.

Popcorn and a movie

Best popcorn ever. I didn't know what I was missing. You will never find microwave popcorn in my home again. This tastes so fresh and yummy. 
 The white cheddar popcorn flavor my husbands favorite. 
Tonight we paired this popcorn with the classic movie The Wedding Singer. It was a perfect selection considering we are headed to an 80's theme birthday party for my best friend this weekend. The movie was totally tubular! I hope everyone enjoyed their President's day!

Stand UP Chicken

Chi-Can! The best way to cook a whole chicken. This method has never turned out bad. It doesn't matter if you use beer or sprite, the chicken is very moist every time. 
 The potato keeps all the steam and moisture inside.
I picked up this rack at Bed Bath and Beyond. I only use the pie pan if I cook the chicken in the oven. I add a little water so the pie pan doesn't get scorched. After you open the can you drink a few swigs and sprinkle a few spices inside add some butter. When the liquid heats up it percolates inside the bird. Delicious! 
 Can't go bad with mashed potatoes. My secret ingredient is sour cream. 

Dinner tonight was a hit in my house. My stepson had 3 plates. In my house that is the biggest form of flattery. Anyone can say it's yummy but I love it when they show it.  Thanks for reading........

**Family Recipe Friday**

Happy Friday everyone. I made Picaros in honor of Nana Mary. She is my husband's grandma on his dad's side. She was a wonderful lady. She always dressed up and had her hair and makeup done everyday. This dish is special in this family. Before I met my husband I had never heard of them. So don't feel crazy if this meal is new to you. Nana lived in Flagstaff, Arizona for many years and I believe that's where they come from. 
Years ago when their was a new baby in the family, Nana would make up a batch of these and bring them to the family. They are easy to reheat. That way they don't have to worry about cooking. We have kept the tradition going and my mother in-law made these for us when we had our children. The day before Nana's memorial service I made up some picaros in honor of her and every time since then I think of her when I make them.
They are a family favorite all around. Last night my daughter, Mia, ate three! She's six years old and she doesn't eat very much, unless it's cake or something sweet. This is my stepson, Seth's (age 11) favorite dinner. He can eat an entire tray of them. He'll be happy to know that I saved him a few. 

 It's shredded chicken cooked with salsa. lightly fry the corn tortilla, roll it up with some cheese and bake in the oven.

I made chocolate peanut butter filled hearts. I thought it was appropriate because my heart is always filled..... Ahhhh.....with peanut butter.

Munchdown!!!! Super Bowl XLVI

Compliments all around!! It's not hard to please a house full of guys. Just give them guy food and put them in front of sports. I am not a sports fan. It's not because I'm a girl because their are plenty of girls I know that are huge fan of sports. Growing up in my house we didn't watch sports. If there were sports on TV it was NASCAR in the den. Trying to make sense of the game and all the rules would be if I took my husband to an Italian Opera and him making sense of the storyline. So I watch for the funny commercials. I must say, I'm kinda disappointed this year. Well maybe the half time show will make up for it..... Nope. Not enough wardrobe malfunction. Bring back Justin and Janet!! Ha ha. The day was not a total loss. We got to eat like pigs.

I will try next time to get a photo of the baby back ribs.... They are gone before I can get them.

Corn bread skillet, made with cream corn.

Havarti Cheese

Italian sausage mild, cooking in beer.
Secret Ingredient: Beer

First Brown sausage for about 10 min. Then add 1/2 cup liquid and cook covered another 10 min.
