Deep Dish Pizza

Deep Dish Pizza


Why haven't I made this before? I am a true thin crust, light sauce pizza eater, but I though I'd change it up and try something new. I have noticed that we don't have the same menu of food over and over. Other than tacos and spaghetti, we have a new recipe or two every week. I think that's what inspired me to do this blog. I like looking back and remembering the things I've cooked that were worth telling about. Maybe one day my kids will look back and remember how much time, effort and love I spent making food for them. 


The dough recipe I use is so easy. Even easier if you have a kitchen aid mixer. Here is the link. The dough is so sticky so prepare to get flour everywhere. For the deep dish I didn't even roll out the dough at all. I halved it and plopped  it in a greased casserole dish. Easy peasy!



Traditionally a deep dish pizza has cheese on the bottom and sauce on top but who doesn't want more cheese on top? I blend up my own sauce. Can or jar sauces tend to have way too much sodium and taste like spaghetti-o's. Yuck! Next time I make this ill be sure to have a bunch of fresh veggies to throw on top. Tonight I made cheese for the kids and pepperoni for my husband and I. This could have fed 4 more people. 


Ok, so here is the magic numbers. Oven set to 420* and I cooked them both at the same time for 25 minuets. The crust was cooked all the way through. I'd say the crust alone was about 2 inches thick. I ate mine with a fork.

Avocado Hair Mask

HOLY GUACAMOLE!



 Last week my mom and I took the kids over to this indoor farmers market and bought some fruit and veggies. I bought way too many avocados and even sent some home with her. I was putting avocado on everything and I still wasn't using them fast enough. So we had a little mommy, daughter spa time.

Here are my ingredients:
1/4 cup Greek yogurt
1 tbs. Honey
1 tbs. coconut oil (heated)
1 egg white
and a bunch of small avocados (I used 6)


Here is Mia with it all worked in. Then I covered it with plastic wrap and set the timer for 30 min.

Old T-Shirt New Scarf



Here is my old T-shirt. It's stained and I know that I'll never wear it again. That's what happens when you're a mommy. All the babies goo gets on you, but its all worth it. 


 
So I cut my t-shirt under the sleeves straight across.  
 
 In the above photo I chose how far I wanted to end my cut and folded the top down as a guide.

 T-shirt material is like magic. When you're done cutting all you need to do is give it a tug and stretch out the fabric and it curls. So even if your cuts aren't perfect once you pull on the fabric it will hide most imperfections.  


I might braid a few of the strips. I love this look. It's very light weight and can be worn over a simple tank in the summer. I must admit I was singing Beastie Boys "She's Crafty" while I did this project.

Here is our Sunday family dinner. Honestly, we sit down and eat dinner together as a family every night. We had marinated, roasted pork tenderloin. The marinade I used was Stubb's.  Fresh green beans and a baked potato. The baked potato was a splurge for the healthy eaters but we used plain Greek yogurt instead of sour cream. It taste identical. 

 This is a cool item I've had for awhile. I picked it up at the farmers market by my house. It's a tater baker. It's like an insulated bag to steam veggies in the microwave. I love it. 
I just wash them and toss them in. I don't even have to poke them with a fork.
Browning my pork in my cast iron skillet. I'm sure you all are getting sick of seeing food in my cast iron skillet. I have beautiful Calphalon pans and I do use them offten. I just seem to always reaching for my cast iron. It is probably my favorite kitchen item, 
 I marinated my tenderloins for about 4 hours.

Honey Cajun Chicken

Words and pictures can not express how yummy dinner was tonight. Often times I find myself sitting at the computer looking up recipes and end up mixing two or three different recipes together. Either I don't have all the ingredients to one whole recipe or I take my favorite ideas from a few different resources (Pinterest) and mix them up.


Tonight's dinner was deceptively easy.  The chicken was cooked up with only a handful of ingredients. 

4 tbs. Butter
2 tbs. Honey
Cajun Seasoning

That's it!







Once chicken is browned on both sides transfer to a cookie sheet and bake 350* for 35 minutes. Time varies depending on the size of the chicken. Always use a meat thermometer. 


Serve with you favorite side dishes. Tonight I did fresh steamed green beans and a cucumber, tomato, avocado salad. 





As I was cooking I noticed how quiet it was, and as a mom of a toddler, that can only mean one of two things. 1. He's up to something; getting into some kind of trouble. 2. He's passed out. Because he has figured out how to climb out of his crib he hasn't taken very many naps lately. So, he took a snooze on the couch while his sister watched Rise of the Guardians.

Healthy Spaghetti with Zucchini and Squash.

Dusting the cobwebs off! It's been a few long months since I've updated this blog. I have made some changes in my mindset regarding the food I eat and feed my family. Incorporating healthy meals is now constantly on my mind. I like to say I have a love/hate relationship with food. Why is it if the food taste so good it's sooo bad for you? I enjoy healthy food. More so then the rest of my family. My husband and kids like red meat, potatoes covered in cheese and butter. Ok I do too but I don't mind not having it every night.

One of my biggest challenges is trying to get the family to try new ingredients. One thing I can not do is serve a plate of unknown. In my house, what I cook for dinner, everyone eats and if you don't like it then you're going hungry. So I have revamped the family's favorites. Tonight it's spaghetti.
